- 200 g lime juice
- 50 g sugar
- 5 g salt

- 5 g lemon juice

COOKING:
This is a very complex recipe, so please read it carefully before preparing it.
- Start by making marshmallows, bring sugar, water and ginger to a boil and let it brew for an hour
- Remove the sliced ginger for syrup
- To prepare marshmallows, use gelatin, which is mixed with 250 g of hot syrup
- Start whipping
- Then add the glucose, sugar and water to the boil at 112 ° C. Add this to the syrup and gelatin.
- Continue whisking until completely cooled.
- Pour the marshmallows into a baking dish and let sit for one hour
- Next marshmallow in a blender with raspberry puree, salt, sugar and lime juice and blend until smooth
- Let this mass steep overnight
- We make a curd mass, for this, mix sugar and raspberries, leave for 30 minutes, then add raspberry juice, yolks and a whole egg
- Heat the mass to a temperature of 75 ° C, then slowly add the gelatin
- Cool the resulting mass
- Whisk the whites until fluffy, adding sugar slowly, then lemon juice, when the meringue is done, heat it to 45 ° C
- Freeze the finished dish for an hour
- Serve with raspberry curd and marshmallow on top
