Barista from MIKO Premium Tastes and JUR Pavel Erofeev shares simple recipes (calculation of a portion ─ for two people) and advises to remember important points when brewing coffee. “You can prepare the 'base' coffee in any convenient way ─ both in the French press and in the Turkish, ─ says the barista. - The optimal grinding for making coffee in a French press is coarse; for making in a Turkish coffee, it is as fine as possible, literally ground into dust, coffee. When preparing coffee in a Turk, do not bring it to a boil - as soon as the foam appears, immediately remove it from the heat, if necessary - for a richer taste - repeat the operation a couple of times."

Puree / pumpkin juice ─ 50 ml

Cinnamon syrup ─ 20 ml

Doppio ─ 2 cups

Cream 20% ─ 30 ml

Preparation

Prepare a cup of doppio. Separately stir in the cream and cinnamon syrup and add the pumpkin juice (or puree). Pour the resulting mixture into tall transparent glasses and pour in the brewed doppio. Garnish each glass with a cinnamon pod and, if desired, whipped cream.

Doppio - 1 cup

Crushed ice - 100 g

Milk - 100 ml

Chocolate sauce or syrup - 20 ml

Cherry / pomegranate syrup - 20 ml

Whipped cream - 30 g

Preparation

Prepare a cup of doppio. Mix milk, chocolate syrup and coffee (leave a third in a loose cup) in a blender with crushed ice until smooth and pour. Apply red syrup (cherry or pomegranate) on the inner walls of the glass with "bloody" drops. Pour the brewed doppios into glasses and garnish with a cap of whipped cream on top, which you also lightly decorate with syrup.

Doppio - 1 cup

Cream 20% ─ 30 ml

Preparation

Brew a cup of doppio (double espresso). Combine the ginger syrup, orange juice and cream in one bowl. Pour into glasses and add equal amount of freshly brewed doppio to each glass. Prepare "caramel apple": cut a fresh apple into thin slices, sprinkle each with sugar and keep on an open fire until caramel forms. Decorate the glasses with caramel apple wedges.
