
Broccoli pancakes

Ingredients (for 4 persons): 250g broccoli, 70g wheat flour, chicken egg, 30g grated cheese (ideally parmesan, but you can take any other hard variety), salt, pepper
- Boil broccoli. Drain and chop the buds.
- Beat the egg well. Now gradually add flour, salt, pepper and cheese to it.
- Combine the mixture with the chopped broccoli pieces.
- Form pancakes from the resulting "dough" and fry them in a hot, greased frying pan. About three minutes on each side.
- Serve hot with sour cream and croutons.
Pasta with salmon and broccoli

Ingredients (for 4 persons): 300g spaghetti, 300g broccoli, 300g salmon fillet, 4 tablespoons olive oil, 1 clove of garlic, 50g pine nuts, zest and juice of 1 lemon, a small bunch of basil
- Bake the salmon in the oven. Disassemble the finished fillet into small pieces.
- In a large saucepan, start boiling the spaghetti. Add broccoli to the pasta five minutes before cooking. Please note that the pasta should be al dente, that is, you need to cook it a couple of minutes less than indicated on the package.
- Pour some of the water from the pan with broccoli and spaghetti into a glass (it is useful for making the sauce), and drain the rest. Return all of the pasta and 3/4 of the broccoli to the pot.
- Whisk 1/4 broccoli, olive oil, basil, garlic, toasted pine nuts, zest and lemon juice in a blender. Add some spaghetti water to add the desired consistency to the sauce.
- Add the sauce to the pasta and stir. Place the pasta on bowls and spread the fish slices on top.
Broccoli "steak"

Ingredients (for 4 persons): 4 large broccoli inflorescences, 500g potatoes, 250g cherry tomatoes, 4 tablespoons of olive oil, 2 tablespoons of soy sauce, salt, pepper
- Preheat oven to 220 degrees. Cut the broccoli inflorescences in half lengthwise.
- Combine olive oil and soy sauce in a bowl. Dip broccoli in sauce and place in large skillet. Cook each steak for three minutes on each side until golden brown.
- Take a baking sheet and line it with baking paper. Top it with broccoli and chopped potatoes (you can get frozen fries from the supermarket) and place in the oven.
- Bake broccoli and potatoes for 20-25 minutes. Ten minutes before cooking, add cherry tomatoes to the vegetables.
- Serve together, sprinkle with salt and pepper.
