Origin story

This legume was first cultivated about 7,000 years ago in Central and South America. It is also known that Indian tribes used beans for funeral rituals. During archaeological excavations in the places of the settlement of the Indians, a mummy was found, in the mouth of which lay the fruit of a white bean, wrapped in cotton cloth. As it turned out, this ritual was performed so that the soul of the deceased would not have to starve in the “other world”. Beans came to Europe in the 16th century. At first, the Europeans used the plant as an indoor plant - to decorate their homes, and only a few years later, they discovered the taste of its fruits. Over time, fans of beans were found in Turkey, for this reason in our country, beans are sometimes called "Turkish bean". Beans came to Russia from France around the end of the 16th century. For the reason that, that the French traders did not leave the guidelines for use (in other words, it is far from the fact that they themselves knew it), in our country beautiful curly shoots were used in the same way as in France for interior decoration. Later, farmers experimentally planted several shoots of beans in the ground and soon noticed that even the cold did not prevent them from germinating. When they saw the first fruits of the beans, they found similarities with peas and decided to try them in the kitchen. Since then, this wonderful and, in fact, different from peas, leguminous plant has often found a place in our diet. Since the inception of this plant, breeders have bred and documented more than 200 types of beans. However, we actually use only two types of beans - common beans and green beans (asparagus). The first is similar to beans, and the second to the valves with small fruits inside, or pods.

How to choose the right one

As we already wrote, there are many varieties of common beans and they differ mainly only in the size of the bean and its shade. And therefore, when choosing fresh beans, you need to focus on its appearance: the fruit should have a smooth surface, a shiny sheen and not have external damage.

When choosing canned beans, you should pay attention to the composition indicated on the package. It should be as follows: beans, salt, sugar, water. If you buy beans in tomato sauce, make sure that they are also natural in composition.

When choosing green green beans, the main factor is the absence of any spots: the pod should be completely green and crunch when broken. Frozen green beans have their own shelf life (no more than 6 months), it is worth paying attention to, as well as the absence of ice in the bag.

How to cook

It should be noted that raw beans cannot be eaten - there is a high probability of poisoning. In order to cook dishes from beans, it must be boiled.

Cooking beans is carried out in several steps:

Step one: sort, rinse and soak the beans in a saucepan of cold water (1 cup of beans for 2 cups of water) for 6-8 hours (when soaking, the water must be changed every 3 hours).

Step two: the water in which the beans were soaked should be drained and filled with a new one.

Step three: put the pot of beans on low heat, bring to a boil.

Step four: drain the water.

Step five: pour fresh water, bring the beans to a boil again and continue cooking over low heat.

Thus, you need to cook the beans for 50-60 minutes. At the beginning of cooking, it is worth pouring two tablespoons of vegetable oil into the pan (so that the beans are cooked at a temperature slightly above 100 degrees). 10 minutes before the end of cooking, add 1 teaspoon of salt.

After boiling, the beans can be canned in jars by filling them with water and adding spices. Or you can cook delicious meals for lunch, for example, a traditional bean soup with tomatoes or a Georgian folk dish - lobio (which is translated from the Georgian language as beans). In addition to beans, you will need to have carrots, onions, celery, olive oil, tomatoes, beef in the refrigerator in advance. The most important thing is that having this stock of food, you can cook both of these dishes, since both soup and lobio (bean stew) in composition, like Italian pizza, depend only on your capabilities and imagination.
