
Flounder with chorizo and fried watermelon

- 4 fillets of flounder,
- a slice of watermelon,
- 20 g sea asparagus
- chorizo sausage,
- 10 g yogurt
- olive oil,
- salt and pepper.
For the sauce:
- 300 ml of champagne,
- 100 ml cream
- 60 g butter
- 40 g shallots,
- white pepper,
- 1/2 spoonful of honey.
Place thin circles of chorizo on the fillet, roll the rolls, secure with toothpicks, lightly fry and bake in the oven. Fry two watermelon cubes with asparagus. Saute the onions in a mixture of butter and champagne, separately heat the cream and honey. Whisk the sauces together with a cappuccino mixer. Place the asparagus on a plate, top with the flounder, watermelon and yogurt. Pour the sauce over.
Grilled tuna with foie gras

- 300 g of tuna,
- 80 g foie gras (canned),
- 10 cherry tomatoes,
- a bunch of corn salad and chives,
- olive oil,
- salt and pepper,
- 1 clove of garlic
- lemon juice.
Quickly, on one side, sauté the tuna in one piece in a hot grill pan (no oil). Cut into 1/2-inch slices. In a hot skillet, quickly fry the cherry halves in butter with lemon and garlic on one side. Heat an open can of foie gras in a water bath. Place the fish and tomatoes on a plate. Put foie gras on top, decorate with herbs.
Fettuccine with sea bass and provola cheese

- perch fillet,
- 30 g porcini mushrooms,
- 10 g of provola cheese,
- 7 cherry tomatoes,
- 5 cloves of garlic
- 1 chili pepper
- 1/2 tbsp. white wine,
- 5 ml olive oil
- basil,
- salt and pepper.
Saute the garlic, chili, basil and fish in oil. Add wine and simmer, covered, for 15 minutes. Then strain the sauce, add mushrooms, diced fried fillets, cherry tomatoes, oil and leave to marinate. Mix the finished fettuccine with the sauce and sprinkle with grated provola cheese.
