It is believed that dumplings owe their origin to Turkish cuisine - initially, it was the Turks who began to cook small boiled pies from unleavened dough with various fillings, which were later called "varaniki".

Then the dish gained popularity in other regions of the world, finally "settling" on the territory of modern Russia and neighboring states. The most common filling options for this dish were cabbage, potatoes, cherries, dried fruits, onions, and the traditional serving was always accompanied by thick sour cream and herbs, if the filling was not sweet. We study the three most popular recipes for the dish.

Dumplings with cherries

Ingredients:

  • Water 200 ml
  • Flour 350 g
  • Vegetable oil 1 tbsp. l.
  • Cherries (fresh or frozen, pitted) 350 g
  • Sugar 100 g
  • Starch 1.5 tsp.
  • Salt

Cooking method:

Mix flour with salt and send to a deep container, make a "hole" in the middle. Pour water, oil into the well and knead the dough (about 10 minutes). Then leave the workpiece under the film for half an hour. Then roll out the dough and cut out circles (about 6 cm in diameter) with a glass.

In a separate bowl, combine the starch, cherries and sugar. Put 2-3 cherries in the center of each circle (depending on the size) and mold the envelopes, pinching the edges of the dough. Cook in boiling water for about five minutes. Serve with sour cream.

Dumplings with potatoes and mushrooms

Ingredients:

  • Water 200 ml
  • Flour 350 g
  • Vegetable oil 1 tbsp. l.
  • Salt
  • Potatoes 500 g
  • Mushrooms (champignons or any other) 250 g
  • Onion 1 pc.
  • Bay leaf
  • Black pepper

Cooking method:

Knead the dough in exactly the same way as in the first recipe. Next, the onions and mushrooms must be chopped into small cubes and sent to a preheated pan sprinkled with vegetable oil. Boil the potatoes, mash with a fork until they are mushy, add mushroom frying to it.

Then roll out the dough and cut out circles, put about half a tablespoon of the filling in the center of each. Blind the edges and send the blank into boiling water for five minutes, adding bay leaf and pepper (if desired, part of the dumplings can be frozen). Serve with sour cream and fresh herbs.

Lazy dumplings

Ingredients:

  • Curd 300 g
  • Flour 5 tbsp. l.
  • Sugar 50 g
  • Butter 25 g
  • Chicken egg 1 pc.
  • Salt

Cooking method:

Add salt, sugar, egg to cottage cheese, mix the mass and add flour to it. Mix the dough again and roll the sausage out of it, which must then be divided into small pieces. We send them to boiling water, cook for about five minutes, stirring regularly. Serve the dish in a plate with butter at the bottom (this way the dumplings won't stick together).
