  • 500 g mascarpone
  • 250 g butter
  • 250 g icing sugar
  • zest of two oranges

Preparation:

  1. Combine sugar, zest, a tablespoon of cocoa, baking powder, and a pinch of salt with flour. Melt the butter and chocolate in a water bath. Whisk the whites into a strong foam. Whisk the yolks and cream in another bowl. Combine all mixtures and stir.
  2. Spread the dough into oiled and flour-dusted tins and place in an oven preheated to 180 degrees for 45 minutes. The finished cakes should cool right in the mold, after which you can put them in the refrigerator overnight.
  3. Now proceed to marzipan. Combine powder, almonds and cocoa. Make a depression in the center of the mixture and pour the egg into it. Stir and form a ball with your hands. Wrap in plastic and forget about it for 30 minutes.
  4. Whisk soft butter for cream with powder until it brightens and becomes lush. Whisk the mascarpone separately and combine with the butter. Add the zest and stir.
  5. Cut the cakes in half horizontally and start assembling the cake, smearing each layer with cream. Roll the marzipan on a sprinkled surface with cocoa and use a baking dish to cut out a circle. Cover the cake with it. Decorate the sides or top with the remaining marzipan. Sprinkle the cake with cocoa.
