Cilantro pesto

Ingredients:

  • 2 cups cilantro, no large twigs
  • ½ cup peeled almonds
  • ¼ cups chopped red onions
  • ½ tsp chopped serrano chili, whole grain
  • 1 tsp salt
  • ¼ cup olive oil

Cooking method:

Combine cilantro, almonds, onion, chili and salt in a blender until smooth. Without turning off the blender, slowly pour in the oil. If the sauce is too thick, you can add a little more oil to taste. Cilantro pesto goes well with pasta, chicken, or tacos. Unused sauce can be frozen in ice cube trays with a tight-fitting lid and consumed as needed.

Ingredients:

  • 1 avocado
  • ½ cup sour cream (fat content to taste)
  • ¼ glass of milk
  • 1 tsp freshly squeezed lemon juice
  • 3 cloves of crushed garlic
  • 1.5 tbsp rice vinegar
  • 2 tbsp dry parsley
  • ¼ tbsp. salt (more to taste)

Cooking method:

Mash the avocado until puree, add sour cream and mix well. Stir the resulting mass with a whisk and pour in the milk. Then add lemon juice, vinegar, garlic, parsley and salt, stirring the sauce well after each ingredient.

Ingredients:

  • 1 glass of water + extra ¼ glass of cold water
  • 5 tbsp cane sugar
  • ¼ cup soy sauce
  • 1-2 tbsp honey
  • 1 large garlic clove, crushed
  • ½ tsp ground ginger
  • 2 tbsp corn starch

Cooking method:

Combine 1 cup water, soy sauce, garlic, honey and ginger in a medium saucepan and heat over medium heat. Separately in a bowl, combine the starch, ¼ cup cold water, whisk until smooth and pour into a saucepan. Heat until the sauce thickens and remove from heat.

Mustard sauce for salad

Ingredients:

  • 40 g Dijon mustard
  • 80 ml white wine vinegar
  • 350 ml rapeseed oil
  • Sea salt and pepper to taste

Cooking method:

In a blender, whisk the mustard and vinegar. While whisking, add the butter gradually until the sauce is smooth. Add salt and pepper.

  • 2 tbsp dijon mustard
  • 2 tbsp liquid honey
  • 3 tablespoons white wine vinegar
  • 100 ml sunflower oil
  • Salt and pepper to taste

Cooking method:

Just mix and whisk all the ingredients together.
